800 g Lamb shoulder
4 twigs fresh Thym
20 cl Wine Vinegar
2 leaves Laurel
Salt
4 red Peppers
1 bunch Marjoram
200 g lean Bacon in 1 piece

Sosati Instructions

    • Cut the bacon in two.
    • Place the lamb pieces and the bacon pieces in different layers in an earthen jar (sandstone type) and divide the herbs between the layers.
    • Cover everything with vinegar and milk and close hermetically.
    • Let soak in the fridge for 2 days, stirring several times through the preparation.
    • Remove the cubes of lamb after the rest period and rub them dry with kitchen paper.
    • Sprinkle with salt. Cut the bacon pieces into cubes
    • Peel the onions and cut into quarters.
    • Make skewers with alternating quarters of onion, cubes of lamb and bacon.
    • Sprinkle with pepper and roast them, depending on your wishes, ± 20 minutes the grill of the oven or on the barbecue, turning them over half the time.
    • Serve piping hot
