400 g fresh Spinach |
6 Eggs, beaten |
2 el Olive Oil |
1 Potato, in fine cubes |
2 Shallots, shredded |
Salt and pepper |

Spinach omelette Directions
- Heat the olive oil in a non-stick pan and fry the potato cubes and shallots for about 2 minutes
- Add the spinach +/- 1 minute, until it is weak.
- Add the eggs with some salt and pepper and stir until the egg is evenly distributed on the pan.
- Reduce the heat and cook the egg mixture until done without stirring.

Serve the omelet upside down on the plate with a mixed salad.
