For 4 Persons

Ingrediënten

400 g fresh Spinach
6 Eggs, beaten
2 el Olive Oil
1 Potato, in fine cubes
2 Shallots, shredded
Salt and pepper
Mixed salad

Spinach omelette Directions

    • Heat the olive oil in a non-stick pan and fry the potato cubes and shallots for about 2 minutes
    • Add the spinach +/- 1 minute, until it is weak.
    • Add the eggs with some salt and pepper and stir until the egg is evenly distributed on the pan.
    • Reduce the heat and cook the egg mixture until done without stirring.
    • Serve the omelet upside down on the plate with a mixed salad.
