1 dl Batida de Coco |
3 gelatin leaves |

Coconut flan with passion fruit Directions
- Beat the egg yolks with the sugar to a white mass.
- Soak the gelatin leaves in cold water.Boil the chef's milk with the milk and the Batida and pour this warm mixture over the beaten eggs, add the soaked gelatin leaves and stir well.
- Allow this mixture to cool.
- Remove the flesh from two passion fruits and warm it up and dissolve half the gelatin leaf in it.
- Spoon a little of this flesh into champagne glasses and allow to cool in the fridge as quickly as possible.
- If the coconut mixture starts to bind, divide this over the glasses to 1 cm. under the edge.
- In the meantime, let the rest of the flesh boil for 5 minutes with the sugar and the water, strain and cool.
- Just before serving, pour the coulis over the flan and serve immediately with a long ice-cream scoop.
