Ingredients

For 4 Persons

Pasta

1 double Chicken fillet
Chicken spices and pepper
120 g Penne or pennini
4 Tomatoes
1 el Balsamico di Modena
1 el Chives, finely chopped
2 el Pine nuts, roasted
Rucola
8 blaadjes Basil
1 Chopped Anchovies
4 el Olive oil, extra virgin
Parmesan flakes

Pasta salad 'Dolce Vita' Directions

    • Season the chicken fillets and fry until crispy. Let cool.
          
    • Cook the pennini / penne al dente in plenty of salted water and some oil. Rinse cold.
          
    • Peel the tomatoes, (first immerse in boiling water, then scare in cold water).
    • Divide them into four, mix the inside and fold them through a sieve.
          
    • Cut the flesh into fine cubes.
    • Mix the anchovies and the garlic, together with the olive oil and the balsamic vinegar.
    • Season with pepper and, if desired, season with a little salt. Also mix in the chives, the filtered tomato and the basil.
    •  Mix this dressing with the tomato cubes under the pasta.
    •  Arrange the arugula on plates, divide the pasta in the middle of the plates, cut the chicken fillet into thin slices and arrange it around the pasta.
       
    •  Finish off with the roasted pine nuts, a twist of the pepper mill and a few parmesan flakes.
